Simple Chicken Zucchini Stir Fry

A quick and healthy stir fry featuring chicken and zucchini, perfect for busy weeknights.

Ingredients

  • 2 chicken breasts, sliced
  • 2 zucchinis, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Optional: red pepper flakes, for heat

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.
  4. Add the sliced zucchini and cook for an additional 3-4 minutes, or until tender.
  5. Stir in the soy sauce, and season with salt, pepper, and optional red pepper flakes to taste.
  6. Serve immediately.

Notes

For a lighter meal, serve with a green salad or roasted vegetables. Leftovers can be stored for up to three days.
