Slow Cooker Creamy Tomato Basil Chicken

A comforting slow cooker dish with tender chicken in a rich tomato and basil sauce.

  • 4 chicken breasts
  • 1 can of diced tomatoes
  • 1 cup heavy cream
  • 1/2 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Add the diced tomatoes with their juice, heavy cream, minced garlic, salt, and pepper.
  3. Stir to combine everything.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in the fresh basil.
  6. Serve with your choice of sides.

Notes

Use boneless, skinless chicken for even cook time. Adjust the thickness of the sauce as needed.
