Slow Cooker Thai Peanut Chicken

A warm and easy slow cooker recipe featuring tender chicken in a rich peanut and coconut sauce, perfect for busy weeknights.

  • 2 pounds boneless chicken thighs
  • 1 cup coconut milk
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • 1/2 teaspoon red pepper flakes
  • Chopped cilantro for garnish
  • Chopped peanuts for garnish

Instructions

  1. In a slow cooker, combine coconut milk, peanut butter, soy sauce, garlic, ginger, brown sugar, lime juice, and red pepper flakes. Stir until well mixed.
  2. Add the chicken thighs to the slow cooker, making sure they are submerged in the sauce.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  4. Once cooked, shred the chicken in the sauce using two forks, stirring to combine.
  5. Serve over rice or noodles, garnished with chopped cilantro and peanuts.

Notes

Use high quality peanut butter for best flavor. For a leaner dish, trim excess fat from chicken thighs. Adjust heat level by varying red pepper flakes.
