Soft Christmas Thumbprint Cookies

Delightful soft cookies with a buttery dough and sweet filling, perfect for festive occasions.

  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Your favorite jam or Nutella for filling
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on a baking sheet lined with parchment paper.
  6. Use your thumb or the back of a spoon to make an indentation in the center of each ball.
  7. Fill the indentations with your choice of jam or Nutella.
  8. Bake for about 12-15 minutes, or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
  10. Dust with powdered sugar if desired before serving.

Notes

These cookies can be stored in an airtight container for up to a week at room temperature. Freeze for longer storage.
