Southwest Chicken Salad

A bright and fresh salad mixing grilled chicken, black beans, corn, lettuce, avocado, and cherry tomatoes with chipotle-lime dressing.

  • 1 lb grilled chicken, diced
  • 1 can black beans, rinsed and drained
  • 1 cup sweet corn, canned or frozen
  • 4 cups romaine lettuce, chopped
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chipotle-lime dressing

Instructions

  1. In a large bowl, combine the grilled chicken, black beans, sweet corn, romaine lettuce, avocado, and cherry tomatoes.
  2. Drizzle with chipotle-lime dressing and toss gently to combine.
  3. Serve immediately or refrigerate for meal prep.

Notes

Serve chilled or at room temperature. Add extra dressing on the side. Store in an airtight container for up to 2 days, keeping dressing separate if desired.
