Spicy Jalapeño Popper Chicken Soup

A creamy and spicy chicken soup that combines shredded chicken, cream cheese, and jalapeños for a comforting meal.

  • 1 lb chicken breast
  • 1 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1 cup jalapeños, diced
  • 4 cups chicken broth
  • 1 cup corn (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the chicken breast in boiling water until fully cooked. Shred the chicken and set aside.
  2. In the same pot, combine chicken broth, cream cheese, garlic powder, onion powder, and jalapeños. Stir until the cream cheese is melted and the mixture is well combined.
  3. Add the shredded chicken and corn if using. Season with salt and pepper.
  4. Simmer for 20-30 minutes over medium heat.
  5. Stir in shredded cheddar cheese until melted and serve hot.

Notes

Serve hot with extra cheddar on top, garnished with cilantro or green onions. Store leftovers in airtight containers for up to 3 days.
