Spinach Grilled Cheese

This simple spinach grilled cheese is quick, warm, and full of flavor, featuring wilted spinach, tangy feta, and sun-dried tomatoes.

Ingredients

  • 2 slices of bread
  • 2 cups fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a skillet, melt 1 tablespoon of butter over medium heat.
  2. Add the fresh spinach and sauté until wilted.
  3. Remove from heat and mix in the crumbled feta cheese and chopped sun-dried tomatoes.
  4. Season with salt and pepper to taste.
  5. Spread the spinach mixture evenly on one slice of bread, then top with the other slice.
  6. In the same skillet, melt the remaining butter over medium heat.
  7. Grill the sandwich until golden brown and crispy on both sides, about 3-4 minutes per side.
  8. Remove from the skillet, slice in half, and serve warm.

Notes

Serve warm on a plate. Pair with tomato soup or a green salad. Store in the fridge for up to 2 days.
