Street Corn Chicken Rice Bowl

A quick and tasty bowl mixing creamy street-corn flavor with chicken and rice, perfect for busy weeknights.

  • 1 pound chicken breast, diced
  • 1 cup rice
  • 1 cup sweet corn, drained
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1/4 cup lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Cook the rice according to package instructions.
  2. In a pan, heat some oil over medium heat and cook the diced chicken until golden and cooked through. Season with salt, pepper, chili powder, and garlic powder.
  3. In a bowl, mix together the sour cream, mayonnaise, lime juice, and sweet corn to create the street-corn sauce.
  4. Once the chicken is cooked, combine it with the rice and street-corn sauce, mixing well.
  5. Serve in bowls and garnish with chopped cilantro.

Notes

Serve warm in bowls with extra lime wedges. Can be topped with extra cilantro or chili powder.
