  • 1 cup sweet corn (fresh or canned)
  • 1/2 cup bell peppers, diced
  • 1/4 cup red onion, diced
  • 1 avocado, sliced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Optional: cheese, salsa, or hot sauce for topping

Instructions

  1. Combine cooked rice, grilled chicken, sweet corn, bell peppers, and red onion in a large bowl.
  2. Drizzle with lime juice and season with salt and pepper; mix well.
  3. Serve in bowls topped with avocado slices, cilantro, and any additional toppings you prefer.

Notes

For extra flavor, grill chicken with spices or marinate it beforehand. Rotisserie chicken is a great shortcut! Feel free to replace grilled chicken with shrimp or tofu for a different protein.
