Ingredients

Scale
  • 2 cups grilled or roasted chicken, diced
  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)

  • Optional: crumbled feta cheese for garnish

Instructions

  2. Char the corn on a grill or pan if using fresh corn. Cool and cut kernels off the cob.
  3. Dice the cucumber and finely chop the red onion. Chop the cilantro.
  4. Whisk together mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and pepper in a small bowl.
  5. Combine chicken, corn, cucumber, and red onion in a large bowl.
  6. Pour dressing over the salad and toss gently to combine. Adjust salt and lime to taste.
  7. Chill for 10 to 20 minutes for flavors to blend, or serve immediately for extra crunch.
  8. Garnish with crumbled feta if you like and serve.

Notes

Store the salad in an airtight container in the refrigerator for up to three days. Add cucumber and dressing just before serving for optimal texture.
