Sugar Cookie Cheesecake

A delightful dessert combining a sweet sugar cookie crust and a smooth cream cheese filling.

  • 2 cups sugar cookie mix
  • 1/2 cup unsalted butter, melted
  • 1 package (8 oz) cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup sour cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the sugar cookie mix and melted butter. Mix well and then press the mixture into the bottom of a greased 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the sour cream until fully combined.
  6. Pour the cheesecake filling over the crust in the springform pan.
  7. Bake for 30-35 minutes or until set.
  8. Allow to cool, then refrigerate for at least 4 hours or overnight.
  9. Once chilled, dust with powdered sugar and serve.

Notes

Make sure the cream cheese is softened for easy mixing. Don’t skip chilling the cheesecake; it helps improve the texture and flavor.
