Scale
  • 1 cup uncooked white rice
  • 2 cups water or chicken broth
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)

  2. Prepare the meat: Heat olive oil in a large skillet over medium heat. Brown ground meat until cooked through; stir in taco seasoning and follow package instructions.
  3. Combine ingredients: Stir in black beans and corn until heated through.
  4. Assemble bowls: Start with rice at the base, add the meat mixture, then top with tomatoes, lettuce, cheese, and salsa.

Notes

Serve warm in bowls and let people add their own toppings. For more flavor, use chicken broth when cooking rice.
