Thai Peanut Chicken Wraps

A vibrant and flavor-packed wrap filled with chicken, fresh veggies, and a creamy peanut sauce.

  • 1 Chicken breast
  • 4 Tortilla wraps
  • 3 tbsp Peanut butter
  • 2 tbsp Soy sauce
  • 1 tbsp Lime juice
  • 1 Carrot, julienned
  • 1/2 Cucumber, sliced
  • 1 Red bell pepper, sliced
  • 2 Green onions, chopped
  • 1 cup Lettuce, shredded

Instructions

  1. Cook the chicken breast and slice it into thin strips.
  2. Prepare the peanut sauce by mixing peanut butter, soy sauce, and lime juice.
  3. Lay out the tortilla wrap.
  4. Start with a layer of lettuce, followed by the chicken, carrots, cucumber, red bell pepper, and green onions.
  5. Drizzle with peanut sauce.
  6. Roll up the tortilla tightly and slice in half.
  7. Serve fresh or wrap in foil for meal prep.

Notes

Serve with lime wedges and extra peanut sauce for dipping. Store wrapped halves in the fridge for up to three days.
