Tiramisu Cookies

Delightful cookies that combine the classic flavors of Italian tiramisu with the convenience of cookie form. Rich cocoa, robust espresso, and creamy mascarpone make these treats a must-try.

  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup espresso or strong coffee
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs and vanilla extract until combined, then gradually add the dry ingredients.
  4. Fold in the espresso until fully mixed.
  5. Drop spoonfuls of the dough onto a baking sheet and bake for 10-12 minutes until the edges are set.
  6. Let the cookies cool completely.
  7. For the frosting, whip mascarpone cheese and heavy cream together until fluffy.
  8. Spread the mascarpone frosting on top of each cookie and dust with cocoa powder before serving.

Notes

Allow cookies to cool completely before frosting to prevent melting. Use freshly brewed espresso for the best flavor.
