Toffee Pecan Brown Sugar Cookies

  • 1 cup brown sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup toffee bits
  • 1 cup chopped pecans
  • 1/2 cup caramel bites
  • Sea salt for sprinkling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the brown sugar and butter until smooth.
  3. Beat in the egg and vanilla extract.
  4. Whisk together the flour, baking soda, and salt in another bowl. Gradually mix the dry ingredients into the wet mixture until combined.
  5. Fold in the toffee bits, chopped pecans, and caramel bites.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Sprinkle a pinch of sea salt on top of each cookie.
  8. Bake for 10-12 minutes or until edges are golden.
  9. Let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze for longer storage in a freezer-safe container.
