A quick and healthy take on traditional egg rolls, this Turkey Egg Roll Bowl combines ground turkey with fresh veggies for a delightful meal.

Ingredients

  • 1 lb ground turkey
  • 2 cups coleslaw mix
  • 1 cup diced bell peppers
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Cooked rice or cauliflower rice for serving

Instructions

  1. Heat the sesame oil over medium heat in a large skillet.
  2. Add the ground turkey and cook until browned, breaking it up with a spatula.
  3. Stir in the garlic and ginger, cooking for 1 minute until fragrant.
  4. Add the coleslaw mix and bell peppers, cooking until the vegetables are tender.
  5. Pour in the soy sauce and cook for another 2-3 minutes.
  6. Season with salt and pepper to taste.
  7. Serve over cooked rice or cauliflower rice, garnished with chopped green onions.
