Tzatziki Chicken Salad

This refreshing salad combines shredded rotisserie chicken with a creamy tzatziki-style sauce made from Greek yogurt, cucumber, and fresh herbs.

Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup Greek yogurt
  • 1 cucumber, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the Greek yogurt, diced cucumber, minced garlic, fresh dill, olive oil, lemon juice, salt, and pepper. Mix until well combined.
  2. Gently fold in the shredded rotisserie chicken until evenly coated.
  3. Serve chilled, garnished with additional dill if desired.

Notes

Serve on a bed of greens, in a pita, or as a sandwich filling. Store in the fridge for up to 3 days. Do not freeze.
