Wholesome Chicken & Sweet Potato Bowls

A hearty and healthy meal featuring roasted sweet potatoes and chicken, perfect for busy weeknights.

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • Chicken (amount as desired)
  • Salt and pepper to taste
  • Fresh greens (like spinach or kale) for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss diced sweet potatoes with olive oil and smoked paprika. Spread in a single layer on a baking sheet and roast for 25-30 minutes until tender.
  3. While the sweet potatoes are roasting, cook the chicken in a skillet over medium heat until fully cooked, seasoning with salt and pepper.
  4. Assemble bowls by dividing the roasted sweet potatoes, cooked chicken, and fresh greens.
  5. Serve warm and enjoy!

Notes

Use parchment paper on your baking sheet for easier cleanup. Don’t overcrowd the sweet potatoes on the baking sheet to ensure even roasting.
