Apple Crisp Cheesecake

A delightful dessert combining creamy cheesecake with warm apple crisp, topped with a crunchy oat streusel.

  • 1 and 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 3 cups sliced apples
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1 cup rolled oats
  • 1/2 cup flour
  • 1/2 cup cold unsalted butter (for streusel topping)
  • Caramel sauce (for drizzling)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into the bottom of the springform pan to form the crust.
  3. In a large bowl, beat the cream cheese, 1 cup sugar, and vanilla until smooth. Add eggs, one at a time, mixing well after each addition. Pour over the crust.
  4. In another bowl, toss apples with cinnamon and 1/4 cup sugar. Spread apples over the cheesecake mixture.
  5. For the streusel, combine oats, flour, brown sugar, and cold butter until crumbly. Sprinkle over the apples.
  6. Bake for 55-65 minutes, or until the center is set and the top is golden.
  7. Let cool, then refrigerate for at least 4 hours.
  8. Serve with a drizzle of caramel sauce.

Notes

Slice with a hot knife for clean pieces. Serve chilled or at room temperature. Add whipped cream or a scoop of vanilla ice cream if desired.
