Baked Honey Marinated Cod

A delightful dish featuring cod fillets marinated in honey, soy sauce, and fresh aromatics, baked to perfection for a tender and flaky texture.

  • 1 lb cod fillets, room temperature
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • Salt, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, whisk together the honey, soy sauce, lemon juice, minced garlic, grated ginger, black pepper, and salt until well combined.
  3. Add the cod fillets to the marinade, ensuring each piece is well coated. Let marinate for at least 15 minutes at room temperature.
  4. Heat olive oil in a non-stick pan over medium heat. Add the marinated cod fillets and sear each side for about 2-3 minutes until golden brown.
  5. Transfer the cod fillets to a baking dish and pour any remaining marinade over the top. Bake for 10-12 minutes or until the fish flakes easily with a fork.
  6. Remove from the oven and let rest for a few minutes before serving.

Notes

Allowing the cod to marinate longer (up to an hour) can enhance the flavor even more. Use fresh ingredients for the best outcome.
