2 Sweet potatoes, peeled and diced
2 cups Cooked chicken (shredded or diced)
1/2 cup BBQ sauce
1 Red onion, diced
1 cup Corn (fresh or frozen)
1 cup Cheddar cheese (shredded)
2 tablespoons Olive oil
Salt, to taste
Black pepper, to taste
1 teaspoon Smoked paprika
Chopped green onions (for garnish)
Instructions
Start by peeling and dicing the sweet potatoes into small cubes so they cook fast.
Heat a large skillet with two tablespoons of olive oil over medium heat.
Add the sweet potatoes and a pinch of salt, black pepper, and smoked paprika. Stir often and cook until they start to soften and get a little brown, about ten to twelve minutes.
Move the potatoes to the side and add the red onion and corn, cook for three minutes.
Add the cooked chicken and pour in the BBQ sauce, stirring to coat all pieces.
Let everything cook together for three to five minutes so the sauce heats through and sticks to the food.
Turn off the heat and sprinkle shredded cheddar cheese over the skillet. Cover the pan briefly so the cheese melts.
Garnish with chopped green onions and serve hot right from the skillet.
Notes
For a different meal feel, serve over rice or in warm tortillas.
