The Best Mediterranean Baked Fish

A delightful baked fish dish that combines fresh vegetables, olive oil, and aromatic spices for a healthy and satisfying meal.

  • 4 fillets of white fish (such as cod, halibut, or sea bass)
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 lemon, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a baking dish with one tablespoon of olive oil.
  3. Spread the cherry tomatoes, bell pepper, and zucchini in a single layer across the bottom of the baking dish.
  4. Drizzle the vegetables with olive oil, minced garlic, oregano, paprika, salt, and pepper. Toss until well-coated.
  5. Lay the fish fillets on top of the seasoned vegetables in the baking dish.
  6. Top the fish with lemon slices.
  7. Drizzle the remaining olive oil over the fish fillets and vegetables.
  8. Cover the baking dish with aluminum foil and bake for 20-25 minutes or until the fish is cooked through.
  9. Remove the foil and broil for an additional 5-10 minutes for a crispy top.
  10. Garnish with fresh parsley before serving.

Notes

Use a meat thermometer to check if the fish is done; it should read 145°F (63°C). Feel free to experiment with different vegetables based on your preference.
