Cajun Sausage Pasta

A quick and flavorful Cajun sausage pasta cooked in one pot, perfect for busy weeknights.

Ingredients

  • 8 oz pasta
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or similar)
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Olive oil
  • Chopped parsley for garnish

Instructions

  1. Heat a splash of olive oil in a large pot over medium heat and add the sliced smoked sausage.
  2. Brown the sausage for a few minutes until it gets color and some crisp edges.
  3. Push the sausage to the side and add chopped onion and bell pepper.
  4. Cook until they soften, then stir in minced garlic for a minute.
  5. Sprinkle the Cajun seasoning over everything.
  6. Pour in the diced tomatoes and add the dry pasta to the pot.
  7. Add enough water or broth to just cover the pasta, bring it up to a boil, then lower the heat and simmer.
  8. Stir occasionally until the pasta is tender.
  9. Pour in the heavy cream and add the shredded cheese, stirring until smooth.
  10. Season with salt and pepper, then serve hot garnished with chopped parsley.

Notes

For best results, serve immediately for optimal creaminess. Leftovers can be stored in an airtight container and reheated with a splash of cream.
