Caribbean Chicken and Rice

A simple, cozy one-pot meal featuring tender chicken, creamy coconut rice, and mild spices that’s perfect for weeknight dinners.

  • 1 pound chicken thighs or breasts
  • 1 cup rice
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup peas (optional)

Instructions

  1. Heat oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
  2. Add chicken and brown on all sides.
  3. Stir in rice, coconut milk, chicken broth, bell pepper, thyme, paprika, salt, and pepper.
  4. Bring to a boil, then reduce heat to low and cover.
  5. Cook for 20-25 minutes, until rice is tender and liquid is absorbed.
  6. Stir in peas if using, and let sit for a few minutes before serving.

Notes

For a brighter flavor, serve with a squeeze of lime or lemon and garnish with fresh herbs.
