Cheesy Garlic Butter Mushroom Stuffed Chicken

A delicious stuffed chicken dish featuring a flavorful mixture of mushrooms, garlic, and cheese, perfect for family dinners and special occasions.

  • 4 chicken breasts
  • 1 cup mushrooms, chopped
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Melt 2 tablespoons of butter in a skillet over medium heat. Add the garlic and cook for about 1 minute until fragrant.
  3. Add the chopped mushrooms, season with salt and pepper, and cook until soft.
  4. Remove from heat and mix in half of the cheese.
  5. Carefully cut a pocket into each chicken breast and stuff it with the mushroom and cheese mixture. Secure with toothpicks if necessary.
  6. Heat olive oil in the skillet and sear the chicken on both sides until golden brown.
  7. Transfer the stuffed chicken breasts to a baking dish, top with remaining cheese and butter.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  9. Garnish with fresh parsley before serving.

Notes

Serve hot with a side of roasted vegetables, salad, rice, or mashed potatoes. Leftovers can be stored in an airtight container for up to three days.
