Cheesy Garlic Parmesan Spaghetti

A quick and flavorful pasta dish combining spaghetti with a creamy garlic and cheese sauce, perfect for busy weeknights.

  • 8 oz spaghetti
  • 4 cloves fresh garlic, minced
  • ½ cup grated Parmesan cheese (plus extra for topping)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente, about 8-10 minutes. Drain, reserving about ½ cup of pasta water.
  2. Prepare the garlic sauce: In a large skillet, heat the unsalted butter and olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant and golden brown.
  3. Add cheese and pasta water: Lower the heat, then add the Parmesan cheese and mozzarella cheese to the skillet. Stir until the cheeses melt and combine into a creamy sauce. Gradually add the reserved pasta water to adjust the sauce’s consistency.
  4. Combine pasta and sauce: Add the cooked spaghetti to the skillet, tossing to coat the pasta in the sauce. Season with salt and pepper to taste.
  5. Serve: Plate the pasta and garnish with chopped fresh parsley and extra Parmesan cheese.

Notes

Pairs well with a side salad or garlic bread. Can add grilled chicken or shrimp for added protein.
