Chicken and Avocado Caesar Salad

A quick, fresh salad featuring chicken, avocado, and classic Caesar flavors for a filling meal.

Ingredients

  • 2 cups cooked chicken, diced
  • 2 hard-boiled eggs, chopped
  • 1 avocado, diced
  • 1/2 cup Parmigiana Reggiano, grated
  • 1 cup mixed greens or romaine lettuce
  • 1/2 cup homemade Caesar dressing
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens and diced chicken.
  2. Add the chopped hard-boiled eggs and diced avocado.
  3. Sprinkle grated Parmigiana Reggiano on top.
  4. Drizzle with homemade Caesar dressing and toss gently to combine.
  5. Season with salt and pepper to taste.
  6. Serve immediately or refrigerate for meal prep.

Notes

Store in an airtight container in the fridge for up to 2 days. For best texture, store dressing separate and add just before eating.
