Ingredients

  • Corn Tortillas
  • Eggs
  • Salsa (Red or Green)
  • Cotija Cheese

Instructions

  1. Cut the corn tortillas into triangles and fry them in oil until crispy.
  2. In a separate pan, scramble the eggs until fully cooked.
  3. In another skillet, heat the salsa until warm.
  4. Combine the crispy tortillas and pour the warm salsa over them.
  5. Top with scrambled eggs and sprinkle cotija cheese before serving.

Notes

Chilaquiles are best served warm with extra salsa and cheese on the side for customization.
