Classic Stuffed Peppers

Delicious and customizable stuffed peppers filled with ground beef, rice, and tomatoes.

Ingredients

  • 4 large bell peppers
  • 1 pound ground beef (or turkey)
  • 1 cup cooked rice
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the onions and garlic until soft. Add the ground beef and cook until browned.
  4. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well.
  5. Stuff the mixture into each pepper and place them in a baking dish.
  6. Top with shredded cheese.
  7. Cover with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until the peppers are tender and the cheese is bubbly.

Notes

To store leftovers, place in an airtight container in the refrigerator for up to 3 days.
