Coconut Lime Fish with Garlic Butter

A delightful dish combining zesty coconut flavors with savory garlic butter that ensures a moist and flaky fish.

  • 4 (6 oz) firm white fish fillets (such as cod, halibut, or tilapia)
  • 1 cup coconut milk
  • Juice of 2 limes
  • Zest of 1 lime
  • 2 tablespoons soy sauce
  • 2 tablespoons honey or maple syrup
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together the coconut milk, lime juice, lime zest, soy sauce, and honey until well combined to create the marinade.
  3. Place the fish fillets in a shallow baking dish and season both sides with salt and pepper.
  4. Pour the marinade over the fish, ensuring it is well coated. Let it marinate for about 30 minutes at room temperature.
  5. For enhanced flavor, marinate for an hour in the refrigerator if time permits.
  6. In a small saucepan, melt the butter over medium heat, then add the minced garlic and sauté for 1-2 minutes until fragrant.
  7. Transfer the fish (along with the marinade) to the oven and bake for 15-20 minutes, or until the fish flakes easily with a fork.
  8. In the last 5 minutes of baking, spoon some garlic butter over each fillet.
  9. Remove the fish from the oven and garnish with fresh cilantro or parsley. Serve immediately with lime wedges on the side.

Notes

For a bit of spice, consider adding red pepper flakes to the garlic butter. Store leftovers in an airtight container in the refrigerator for up to 2 days.
