Cowboy Club Sandwich

A hearty grilled sandwich featuring smoky bacon, melted cheddar, tender chicken, and creamy BBQ mayo, served on crispy sourdough bread.

  • 6 slices of thick-cut bacon
  • 2 tablespoons BBQ sauce
  • 2 tablespoons mayonnaise
  • 4 slices of hearty sourdough bread
  • 4 ounces cooked chicken breast, thinly sliced
  • 4 slices cheddar cheese
  • 1 ripe avocado, peeled and sliced
  • 2 medium tomatoes, sliced
  • 4 leaves of romaine lettuce
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Place the bacon slices on a baking sheet and bake for 15-20 minutes, or until crispy. Remove from oven and drain on paper towels.
  2. In a small bowl, mix together the BBQ sauce and mayonnaise until well combined for a flavorful spread.
  3. Lightly butter one side of each slice of sourdough bread.
  4. Heat a skillet over medium heat. Place the buttered side of the bread down into the skillet. Begin by placing a slice of cheddar cheese on each slice of bread.
  5. Add thinly sliced chicken breast on top of the cheese slices on two of the bread slices.
  6. Spread the BBQ mayonnaise mixture over the remaining slices of bread.
  7. Layer the avocado slices, tomato slices, crispy bacon, and romaine lettuce over the chicken-covered bread.
  8. Season with salt and pepper to taste.
  9. Top with the remaining bread slices, buttered side up.
  10. Flip carefully to grill the other side until toasted and golden brown.
  11. Use a sharp knife to slice the sandwich diagonally. Serve warm.

Notes

Serve with a side of chips or a simple salad, and extra BBQ mayo for dipping. For best results, use day-old sourdough.
