2 fillets of salmon
2 cups fresh spinach
8 ounces pasta (such as fettuccine or linguine)
1 cup heavy cream
2 tablespoons olive oil
2 cloves garlic, minced
Salt and pepper to taste
Grated Parmesan cheese for serving
Instructions
Cook the pasta according to package instructions until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant.
Season the salmon with salt and pepper, then add to the skillet. Cook for about 4-5 minutes on each side, or until cooked through. Remove from the skillet and flake into large pieces.
Add heavy cream to the same skillet and bring to a simmer. Stir in spinach until wilted.
Add the cooked pasta and flaked salmon to the skillet, tossing gently to combine.
Serve with grated Parmesan cheese on top.
