4 white fish fillets (cod, tilapia, or haddock)
1/2 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper to taste
Lemon wedges for serving (optional)
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
Pat the fish fillets dry with paper towels and season both sides with salt and pepper.
In a mixing bowl, combine grated Parmesan, panko breadcrumbs, olive oil, garlic powder, and paprika. Stir until evenly coated.
Place the fillets on the baking sheet and spoon the Parmesan breadcrumb mixture evenly over the top of each piece. Press it down lightly to help it stick.
Bake for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork. The topping should be golden brown and crispy.
Remove the fish from the oven and let it rest for 2 minutes. Serve with lemon wedges for squeezing over the top.
Notes
For extra crunch, broil the fish for the last 1-2 minutes of baking.
