Crispy Parmesan Crusted Fish

A delicious and simple recipe for fish with a crunchy Parmesan and Panko crust.

  • 1.5 lbs white fish fillets (cod, haddock, tilapia, or snapper)
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or grease it lightly with olive oil.
  3. In a mixing bowl, combine the Parmesan cheese, Panko breadcrumbs, garlic powder, oregano, salt, and pepper. Drizzle in the olive oil and mix until well combined.
  4. Pat the fish fillets dry and squeeze fresh lemon juice over them.
  5. Coat each fillet in the breadcrumb mixture until fully covered.
  6. Place the coated fillets on the prepared baking sheet and bake for about 15 minutes or until golden brown and flaky.
  7. Serve hot with optional lemon wedges and chopped fresh parsley.

Notes

For added flavor, consider including herbs like thyme or parsley in the breadcrumb mixture. You can also substitute Panko breadcrumbs with regular breadcrumbs or use nutritional yeast for a dairy-free version.
