Dark Chocolate Lovers Dream | Mount Doom Cake

A rich and moist dark chocolate cake layered with a smooth dark chocolate ganache for chocolate lovers.

  • 1 ¾ cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened Dutch-process cocoa powder
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 ½ cups chopped dark chocolate
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch cake pans with parchment.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to dry ingredients and beat until smooth.
  4. Slowly pour in boiling water while mixing on low. Batter will be thin—this is normal.
  5. Divide batter into pans and bake for 30–35 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  7. Heat heavy cream until simmering, pour over chopped dark chocolate, let sit for 5 minutes, then stir until smooth. Chill slightly until thickened.
  8. Stack cake layers with ganache in between, then frost the top and sides generously.

Notes

For best flavor, serve at room temperature. Use high-quality dark chocolate for the ganache.
