Instructions

  1. Begin by cooking the crumbled sausage in a skillet over medium heat until browned. Remove and set aside.
  2. In the same skillet, add flour and gradually pour in the milk while stirring to ensure smooth gravy. Cook until thickened; then, mix in seasonings and the reserved sausage.
  3. For the enchiladas, layer scrambled eggs, hash browns, and cheese in each tortilla before rolling them up.
  4. Place rolled enchiladas in a baking dish, and pour the sausage gravy over the top.
  5. Bake in a preheated oven at 350°F for about 20 minutes, until heated through and cheese is bubbly.
