1 lb chicken breasts (boneless, skinless)
1/4 cup honey
2 limes (juiced)
1 tsp chili powder
1/2 tsp cumin
Salt and pepper (to taste)
1 cup rice (uncooked)
1 avocado (diced)
1/2 cup cilantro (chopped)
1/4 cup sour cream
Instructions
Whisk together honey, lime juice, chili powder, cumin, salt, and pepper. Coat the chicken breasts in the marinade and let them sit for at least 30 minutes.
Prepare 1 cup of rice according to package directions. Once fluffy and tender, set aside to cool.
Heat your grill or skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side until it’s nicely browned and no longer pink inside.
In a large bowl, combine the cooked rice, diced avocado, chopped cilantro, and sour cream. Gently fold everything together until well mixed and creamy.
Spoon a generous scoop of the creamy avocado rice onto serving plates. Top with sliced honey lime chicken, and drizzle extra lime juice over the top.
