These ultra-easy, melt-in-your-mouth peanut butter cookies have the perfect balance of salty and sweet. Ready in just 15 minutes, they’re a quick homemade treat your family will love.
1 1/2 cup all-purpose flour (180g)
1/2 cup unsalted butter, room temp (113g)
1 cup peanut butter (250g)
1/2 cup brown sugar, lightly packed (100g)
1/2 cup sugar (100g)
1 tsp vanilla extract (5mL)
1 large egg, room temp
3/4 tsp baking powder (3g)
1. Preheat oven to 350F (175C).
2. Sift flour and baking powder together, then whisk to combine.
3. In a stand mixer, cream butter and sugars until light and fluffy. Optional: Add 1/4–1/2 tsp sea salt.
4. Add peanut butter and mix until fully incorporated.
5. Mix in the egg and vanilla extract.
6. Add the flour mixture and beat until just combined.
7. Roll dough into 1-inch balls and place on a baking sheet lined with parchment paper.
8. Flatten each dough ball using a fork in a criss-cross pattern.
9. Bake for 10 minutes, then let cookies cool on the baking sheet to set completely.
Cookies will appear soft out of the oven—this is normal.
Let them rest on the baking sheet to finish setting before transferring.
If your peanut butter is not very salty, add 1/4–1/2 tsp salt to the dough for balance.
