Dump-and-Bake Chicken Tzatziki with Rice

An easy all-in-one baked meal featuring chicken and rice topped with tangy tzatziki sauce.

  • 4 chicken breasts
  • 1 cup rice
  • 1 cup tzatziki sauce
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Fresh herbs (such as dill or parsley) for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, combine the rice, olive oil, garlic, lemon juice, salt, and pepper.
  3. Place the chicken breasts on top of the rice mixture.
  4. Pour tzatziki sauce over the chicken.
  5. Cover the dish with foil and bake for 30-40 minutes, or until the chicken is cooked through and the rice is tender.
  6. Remove the foil and bake for an additional 10 minutes to allow the top to get golden.
  7. Garnish with fresh herbs before serving.

Notes

Use even-sized chicken breasts for even cooking. Let the dish rest 5 minutes before serving.
