Easy Crockpot Chicken Fajitas

A simple and flavorful recipe for tender chicken fajitas cooked in a slow cooker, perfect for busy nights.

  • 1 pound boneless, skinless chicken breasts
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 packet fajita seasoning
  • 1 can diced tomatoes with green chilies (optional)
  • Tortillas for serving
  • Toppings: avocado, sour cream, cheese, etc.

Instructions

  1. Place the chicken breasts in the slow cooker and sprinkle with fajita seasoning.
  2. Add sliced bell pepper, onion, and diced tomatoes if using.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Once cooked, shred the chicken with two forks and stir to mix with the veggies.
  5. Serve in tortillas with your favorite toppings.
