Easy Spicy Salmon Sushi Bake

A flavorful oven-baked casserole that combines cooked salmon, spicy mayo, and warm sushi rice, topped with avocado, nori, and sesame for a sushi-inspired dish.

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 lb salmon, cooked and flaked
  • 1/4 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 avocado, sliced
  • 1 sheet nori, cut into strips
  • Sesame seeds for garnish
  • Green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse sushi rice under cold water until the water runs clear. Combine with 2 1/2 cups water in a pot, bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
  3. In a bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is done, combine it with the vinegar mixture and spread it evenly in a baking dish.
  4. In another bowl, mix flaked salmon with mayonnaise and sriracha. Spread this mixture over the rice in the baking dish.
  5. Bake in the preheated oven for about 15-20 minutes, until heated through.
  6. Top with sliced avocado, nori strips, sesame seeds, and green onions before serving.

Notes

Serve warm and allow for customized toppings such as extra sriracha, soy sauce, or pickled ginger.
