Easy Taco Rice Bowl

A quick and filling weeknight meal that combines seasoned ground meat, rice, beans, and vegetables, topped with salsa and cheese.

Ingredients

  • 1 cup long-grain white rice
  • 1 lb ground beef or turkey
  • 1 oz taco seasoning (1 packet)
  • 1 medium bell pepper, diced
  • 1 cup corn (canned or frozen)
  • 1 can (15 oz) black beans, rinsed
  • 1 cup salsa of your choice
  • 1 cup shredded cheddar cheese

Instructions

  1. Cook the rice according to package instructions.
  2. In a large skillet over medium heat, brown the ground meat for about 5 minutes; drain excess fat.
  3. Stir in taco seasoning and a splash of water; simmer for 3 minutes.
  4. Add diced bell pepper, corn, and black beans; stir until heated through (about 3 minutes).
  5. Fold the cooked rice into the meat and veggie mixture until well combined.
  6. Serve in bowls topped with salsa and shredded cheese.

Notes

For extra flavor, toast the taco seasoning in the skillet before adding water. Customize toppings for individual preferences.
