Gilmore Girls Coffee Cake Cookies

Cozy, cinnamon coffee cake cookies that blend soft cookie dough with a crumbly streusel topping, reminiscent of a warm diner treat.

  • 1 cup Brown Sugar
  • 1 large Egg

  • 2 1/2 cups All-Purpose Flour
  • 1/4 cup Butter (for streusel)
  • 1/4 cup Brown Sugar (for streusel)
  • 1/3 to 1/2 cup Flour (for streusel)
  • 1/2 tsp Ground Cinnamon (for streusel)
  • Pinch of Salt (for streusel)
  • 1/2 cup Powdered Sugar
  • 1 tbsp Milk
  • splash Vanilla Extract (for icing)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream 1/2 cup butter, 1/2 cup vegetable oil, and 1 cup brown sugar until smooth.
  3. Beat in 1 large egg and 1 tsp vanilla extract until mixed.
  4. Add 2 tsp ground cinnamon, 1/2 tsp baking soda, 1/2 tsp baking powder, and 1/2 tsp salt. Stir to combine.
  5. Mix in 2 1/2 cups all-purpose flour until a soft dough forms. Do not overmix.
  6. For the streusel: cut 1/4 cup butter into 1/4 cup brown sugar, 1/3 to 1/2 cup flour, 1/2 tsp ground cinnamon, and a pinch of salt. Use a fork or fingers to make coarse crumbs.
  7. Scoop dough by rounded tablespoons onto the baking sheet, spacing about 2 inches apart. Press a pinch of the streusel on top of each cookie ball.
  8. Bake for 10–12 minutes, until edges set. Cool cookies on the baking sheet for 5 minutes, then move to a cooling rack.
  9. Make the glaze: whisk 1/2 cup powdered sugar with 1 tbsp milk and a splash of vanilla until smooth.
  10. Drizzle glaze over cooled cookies and let set before serving.

Notes

Store in an airtight container for up to 3 days, or freeze for longer storage.
