Greek Chicken Bowls

These Greek Chicken Bowls are a quick and healthy meal packed with fresh vegetables, tender chicken, and a creamy tzatziki sauce.

  • 2 boneless, skinless chicken breasts
  • 1 cup quinoa or rice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced (for tzatziki)
  • Salt to taste

Instructions

  1. In a bowl, mix olive oil, garlic, oregano, salt, and pepper. Marinate chicken for at least 30 minutes.
  2. Grill or cook the chicken over medium heat until cooked through, about 6-7 minutes per side. Let it rest before slicing.
  3. Cook quinoa or rice according to package instructions.
  4. For the tzatziki sauce, mix yogurt, lemon juice, garlic, and salt in a bowl.
  5. In serving bowls, layer quinoa or rice, sliced chicken, cucumber, tomatoes, onion, feta, and parsley.
  6. Drizzle tzatziki over the bowls and serve.

Notes

Marinate the chicken for at least 30 minutes for more flavor, and feel free to swap chicken for shrimp, pork, or tofu based on your preference.
