Green Chilaquiles

Quick and delicious green chilaquiles made with fried corn tortillas and rich salsa verde, perfect for breakfast or any meal.

Ingredients

  • Corn tortillas
  • Salsa verde
  • Eggs
  • Oil for frying
  • Salt
  • Cheese (optional)
  • Sour cream (optional)
  • Onion (optional)
  • Cilantro (optional)

Instructions

  1. Cut the corn tortillas into triangles.
  2. Heat oil in a pan and fry the tortilla triangles until golden and crispy.
  3. Remove from oil and drain on paper towels.
  4. In the same pan, add salsa verde and cook for a few minutes.
  5. Add the fried tortillas to the salsa and stir to combine.
  6. Serve hot, topped with a fried egg, cheese, sour cream, onion, and cilantro as desired.

Notes

For extra flavor, use homemade salsa verde and fry tortillas in small batches to maintain their crunch.
