Grilled Chicken and Veggies

A delightful dish combining juicy grilled chicken with fresh seasonal vegetables, perfect for weeknight dinners or weekend gatherings.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 bell peppers (any color), sliced
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Toss the chicken and veggies with olive oil, garlic powder, paprika, salt, and pepper until well coated.
  3. Place the chicken on the grill and cook for about 6-7 minutes per side or until the internal temperature reaches 165°F.
  4. Add the veggies to the grill and cook for about 4-5 minutes or until tender, turning occasionally.
  5. Remove from the grill and let it rest for a few minutes.
  6. Serve the grilled chicken with veggies and garnish with fresh herbs if desired.

Notes

Marinating the chicken for a couple of hours will enhance the flavor. Feel free to experiment with different spices.
