Grilled Chicken and Mixed Vegetables

Ingredients

  • Grilled chicken breast – 2 pieces
  • Mixed vegetables (bell peppers, zucchini, asparagus) – 4 cups
  • Olive oil – 2 tablespoons
  • Garlic – 2 cloves, minced
  • Salt – 1 teaspoon
  • Pepper – 1/2 teaspoon
  • Lemon juice – 1 tablespoon

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix olive oil, garlic, salt, pepper, and lemon juice.
  3. Brush the chicken with the mixture.
  4. Place the chicken on the grill and cook for 6-7 minutes on each side.
  5. In a separate bowl, toss the mixed vegetables with the remaining oil and seasoning.
  6. Grill the vegetables for about 5-7 minutes until tender.
  7. Serve the grilled chicken with the vegetables.

Notes

Use a meat thermometer to ensure the chicken is fully cooked (165°F). You can marinate the chicken overnight for deeper flavor.
