Honey BBQ Chicken Rice

A one-pot meal combining tender chicken, sweet BBQ sauce, and fluffy rice, perfect for busy weeknights.

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes on each side until golden brown. Remove the chicken and set aside.
  3. In a bowl, mix BBQ sauce, honey, soy sauce, and minced garlic.
  4. In the same pan, toast the uncooked rice for 1–2 minutes.
  5. Add chicken broth and half of the BBQ sauce mixture. Stir to combine.
  6. Return the chicken to the pan and pour the remaining sauce over the top.
  7. Cover and simmer on low heat for 15 minutes.
  8. Add mixed vegetables (if using), cover, and cook for 5 more minutes or until the rice is tender and the chicken is cooked through.
  9. Let sit for 5 minutes. Garnish with green onions and serve hot.

Notes

Feel free to customize with your favorite vegetables. Store leftovers in an airtight container for up to 3 days.
