Honey Butter Cornbread Poppers

Small, sweet cornbread muffins made with honey and butter that are quick to prepare and great warm or at room temperature.

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/4 cup honey

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a muffin pan.
  2. In a large bowl, mix the cornmeal, flour, sugar, baking powder, and salt together.
  3. In another bowl, whisk together the milk, melted butter, eggs, and honey until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared muffin pan, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  7. Remove from the oven and let cool briefly before serving. Enjoy these warm with extra honey butter on the side!

Notes

Store at room temperature in an airtight container for up to 2 days or in the fridge for up to 5 days. Can be frozen for up to 2 months.
