Honey Lime Chicken with Mango Salsa

A vibrant and flavorful dish that balances sweet, sour, salty, and spicy, perfect for quick meals or casual dinners.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1/4 red onion, diced
  • 1 jalapeño, seeded and diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Whisk together honey, lime juice, olive oil, salt, and pepper in a bowl. Marinate the chicken in this mixture for at least 30 minutes.
  2. Preheat the grill (or oven) to medium-high heat.
  3. Grill (or bake) the chicken for about 6-7 minutes per side, or until fully cooked.
  4. Combine mango, red onion, jalapeño, cilantro, and lime juice in a separate bowl to make the salsa. Mix well.
  5. Serve the grilled chicken topped with mango salsa, alongside rice, salad, or tortillas.

Notes

For added flavor, marinate chicken up to two hours but avoid overnight. Serve warm or at room temperature.
